Shrimp Czarina


Serves 6
5 TBSP. butter (divided)
1 cup julienned onion
1 cup julienned zucchini
1 cup julienned yellow squash
½-1 tsp. cayenne pepper
½ tsp. white or black pepper
1 TBSP. lemon juice
½ tsp. salt
2 cups heavy cream
**12 medium to large shrimp
½ cup parmagianno reggiano

1- Melt 4 TBSP butter on medium heat. Add vegetables and cook until tender. (about 2 mins.)
2- Add peppers. Cook 1 minute. (Because of my kids I leave the Cayenne out and let people add it to their own plates as they like.)
3- Add lemon juice and shrimp. Cook until shrimp turn pink.
4- Add salt and stir in remaining butter, cream, and cheese.
5- Serve over spaghetti or angel hair pasta.

**Baked or grilled chicken that has been cut into bite size pieces or strips may be used in place of the shrimp.
